Our Weekly Menu
Easter Sunday turned out to be the most beautiful, warm spring day. We grilled marinated chicken breasts and served asparagus and corn on the cob as sides. Here's what we are having for the rest of the week:
Monday: Chicken Piccata, Potato Salad
The plan was to serve the potato salad with the grilled chicken breasts on Sunday but I didn't end up making the potato salad until Sunday night so we ate it with Monday's supper. So. The chicken Piccata was absolutely horrible. Seriously, I haven't made a dish that yucky in ages. Not sure what I did wrong because the recipe had pretty good reviews by others. The only thing I did differently was to use an egg wash to coat the chicken instead of the mayo and used 2 lemons instead of the 3 Kraft suggests.
Tuesday: BLT's and Potato Salad
Wednesday: Comfort Ham & Mac Casserole, Garden Salad
Thursday: Grilled Brats, 3 Bean Salad, Corn
Friday: Hawaiian Pizza
