Chicken & Black Bean Burritos

Today is going to be really busy and on really busy days it is soooo tempting to order take out. We are planning to get take out for our special Friday night meal but we are not going to do it two nights in one week! One thing that works really well for me is to prepare something the night before that can be quickly heated up.


Last night I whipped up a batch of Chicken and Black Bean Burritos. This is one of our favorite quick make ahead suppers. Tonight we will microwave them with a little cheddar cheese on top and serve them with chopped tomatoes, scallions (from our garden!), salsa and sour cream.

Here's the recipe:

Chicken & Black Bean Burritos

1 Cup Cooked and Diced Chicken
1 Can Rinsed and Drained Black Beans (can substitute refried beans)
2 Cups Shredded Cheddar Cheese
Flour Tortillas

Soften tortillas in the microwave. Fill with a small amount of chicken, beans and cheese Reserving some of the cheese to top the burrito with. Roll up tightly. Store in the refrigerator or freezer until you need them. When you are ready to eat them, place the burritos on a platter, top with cheese and microwave for about 5 minutes (assuming they are thawed out). Then top with your favorite combination of salsa, onions, sour cream, tomatoes and lettuce!
